Cobbitty was developed around the property of Rowland and Elizabeth Hassall. Their son, Rev Thomas Hassall (1794-1868), founded the first Sunday School in Australia when he was 19 years old, and became the first rector of Cobbitty in 1827. He built the Heber Chapel, a simple stone schoolroom dedicated in 1828 to the memory of Rt Rev Reginald Heber (1783-1826), who was Bishop of Calcutta at the time when the whole of Australia was one of his archdeaconries.
The later church, a simple Gothic building with a spire, was designed by John Verge (1782-1861) and was consecrated by Bishop Broughton in 1842. The organ, which is still installed in the rear gallery, is by William Davidson, and dates from 1876. It is unaltered, with a delightful chorus.

This church (remodelled in 1987) has an organ built in 1888 by Harrison & Harrison of Durham for a residence in Bowral, as a two manual instrument with 10 ranks, but no pedal stops. It was purchased from a private house in Campbelltown in 1906, enlarged by C W Leggo in 1932 and restored by Arthur Jones in 1966. S T Noad & Son added two stops (a Rohr Flute on the Great and an Oboe on the Swell) and pedals on pneumatic action.
P D G Jewkes Pty Ltd moved the instrument to its present location and added the Great Fifteenth.
